Food Safety Talk 184: Pull Your Pork Properly

The show opens with some brief news about the recent Apple keynote. From there the discussion turns to books about food safety and Don's recent travels. Then the guys jump right into listener feedback talking about fictional petfood safety, food fraud, school gardens, cooking pasta inside a cheese wheel, using pressure cookers to sterilize microbiological media, conservative views on food safety and the FDA, electrolyzed water as a cleaning agent, the role of lawyers in the food safety system, and inexpensive high-quality folding microscope, FDA's upcoming frozen berries sampling assignment, the safety of expired foods, water temperature for handwashing, bacterial transmission from splashing water and insects, and quaternary ammonium compounds and cotton cloths. Ben wraps things up with his discussion about making a video that combines his love of hockey and food safety, as well as his recent adventures at the CSTE meeting.

Food Safety Talk 134: Restaurants always have Pi

The show opens with a discussion of Ben's busy hockey schedule, chess and other games you can play on your iPhone. After the usual discussion of popular culture and television, the guys discuss the dangers of buying your degree online, famous people Ben knows on twitter and eventually move to food safety. The first food safety topic for discussion is a recent article on the relationship between minimum wage and restaurant inspection reports. The listener feedback section includes a discussion of vacuum packaged fish and botulism, clever tips for training unusual audiences, and the importance of cleaning the crud at the bottom of steam kettles. This leads to a discussion of allergens and species adulteration. Listener feedback concludes with a discussion of lactic acid as an alternative to triclosan in dish liquids. A discussion of food safety in the news includes the risks of chicken sashimi, and some insight into the California nacho cheese outbreak.

Food Safety Talk 96: Boom goes the dynamite

The guys are on a roll. They are very happy that they are releasing new episodes consistently. The show opens with a discussion of topics like Boom, Boom Goes the Dynamite, Dyn-o-mite, Beastie Boys, William Shatner, Yankee Hotel Foxtrot, The Avett Brothers, The Sadies, and The Best of Little Feat.

They quickly transition with the Maytag Raw Milk Blue Cheese recall by Whole Foods. Ben says that there is a no way for customers to tell if milk was pasteurized; they must read the label, and he notes the absence of the word pasteurized makes the difference, not the presence of the word raw. The discussion moves to the literature and a research paper on the survival of E. coli O157:H7 in Gouda and Cheddar aged for 60 days. Don emphasizes that the rate of pathogen decrease and not the days of survival which is important. Ben asked Don if it is safe to consume raw milk. “It depends, and it is complicated” he replies. The conversation turns to an article by David Gumpert “Is OPDC Bumping Scalability Limits, to Detriment of Raw Milk Nationally”. The guys note that exposure is less when a business is small. Don goes off a tangent, mentioning two articles about the brain and self-government. Ben responds to Don by recommending another on risk communication, which suggest that it is hard to change people beliefs.

From there the podcast digresses into Wordy Rappinghood and Kanye West Facts before turning to the boiling of water as affected by atmospheric pressure, and altitude in response to a question from Linda Harris. The show ends with a discussion of GFSI audits and poor food safety culture.

Food Safety Talk 17: Blood, Sugar, Nakaochi Scrape, Magik
